VERY VEGGIE CHICKEN PIZZA with a TWIST
Yields 16 slices
2 Mama Mary’s 12 inch Gourmet Pizza Crusts
Olive oil to mist the crust
1 14 ounce jar Mama Mary’s Pizza Sauce
3 large marinated and grilled chicken breasts, cut into thin strips
1/2 cup green bell pepper, cut into thin strips
1/2 cup red bell pepper, cut into thin strips
1/2 cup orange bell pepper, cut into thin strips
1/2 cup yellow bell pepper, cut into thin strips
1 cup of mushrooms, cleaned and sliced
4 medium Roma tomatoes, peeled and sliced thin
1/2 cup sliced black olives, drained
1/2 cup thinly sliced sweet onion
1 cup canned pineapple chunks, drained
1/4 cup unsalted sunflower seeds, toasted
1/4 teaspoon paprika
2 cups Colby Jack and Mozzarella Cheese, shredded
Marinade for chicken:
1/3 cup olive oil
1/4 cup balsamic vinegar
Salt and pepper
Dash of oregano
Preheat oven to 450 F.
In a non-reactive glass bowl whisk to combine all of the ingredients for the marinade. Add the chicken breasts, turn to coat each breast well. Cover and refrigerate for at least 30 minutes or up to 1 hour, turning the breasts at least once. Drain the c
hicken breasts before cooking, discard marinade.
Grill or sauté the marinated chicken breasts until thorough cooked. Set aside to cool and slice thin.
Line 2 vented pizza pans or large baking sheets with parchment baking paper that has been trimmed so edges will not hang over the pan or touch the oven wall. Place a pizza crust on each parchment-lined pan. Mist the crust and rim with olive oil, spread p
izza sauce evenly over each crust.
In the following order evenly divide the remaining ingredients over the pizza sauce: chicken strips, pepper strips, mushrooms, tomatoes, black olives, onions, pineapple chunks, sunflower seeds, paprika, ending with the cheese.
Reduce oven temperature to 425F. Bake one pizza at a time.
Keeping pizza on the pan, bake for 12 minutes. To crisp the crust, remove from the parchment-lined pan and place directly on the oven rack for 3 additional minutes. Remove from the oven. Bake the second crust.
